Maple Acorn Squash Salad

Prep Time: 10 min. Cook Time: 25 min. Total Time: 35 min

Servings: 4



Ingredients:

1 acorn squash

4 tbsp maple syrup (or olive oil, honey, or agave syrup)

2 cups pomegranate seeds

1/4 cup pepitas

5 oz baby arugula.

4 oz feta cheese

1/2 cup olive oil

1/4 cup apple cider vinegar

1/2 tsp salt & pepper

1/3 cup buttermilk (or milk or heavy cream).



Directions:

Step 1

Preheat oven 375 degrees.


Step 2

Cut squash in half, scoop out seeds, slice in 3/4 in thick rounds. Brush squash slices with syrup and cook on baking sheet for 20-25 min. Brush again with syrup 5 min. before removing from oven. Set aside to let cool.


Step 3

Combine arugula, pomegranate seeds, feta cheese, pepitas, and acorn squash.


Step 4

Combine olive oil, apple cider vinegar, buttermilk, and salt & pepper for dressing.


Step 5

Pour dressing over salad.
